The
habaneros are said to be the hottest of all the peppers - up to 40 times
hotter than a jalapeño! There are many different forms of habaneros: typical habaneros are orange when ripe, but some ripen to red, some to brown, some to white, and some to purple. In Jamaica, their home grown habaneros are known as "Scotch bonnets." Ripe habaneros are very sweet and have a distinctive flavor that is readily recognized IF you can get past the fire! They are usually used fresh in salsas. Mince ripe habaneros with onions, tomatoes and lime juice for a delightful Caribbean hot sauce.
